Ever since I first watched Moonstruck, I have been mildly obsessed with the breakfast scene near the end. If you haven’t seen this film, you absolutely must. In the final scene, the whole family gathers in a climactic moment over breakfast. The matriarch is making eggs in a basket topped with roasted red peppers, and it always makes my mouth water. I have longed for experiencing a slow morning in southern Italy or France with the frying pan sizzling and the smells of coffee and the warm sea breeze in the air.  As I live nowhere near the ocean, or the Mediterranean for that matter, I have set out to create my own Moonstruck eggs.

Easy, High-Protein Mediterranean Breakfast Idea

Eggs and toast are one of my go-to breakfast recipes (see my 3 Quick & Health1y Breakfast Ideas ). This version takes it a step further. An everyday breakfast turns into a protein-packed meal that is both nourishing and elevated. When mornings are slow and you don’t have to rush out the door, I like to have a savoury breakfast like this to start the day right. Here, I’ve added texture and a big boost of flavour to the eggs with sundried tomatoes.

Ingredients for Mediterranean Egg Toast with Sundried Tomatoes:

This recipe for Mediterranean Eggs in a Hole with Sundried Tomatoes is easy, affordable and flexible. I usually like to make mine with sourdough bread, but you can substitute with any crusty bread you have on hand.

  • Slices of Bread – I use sourdough, either a homemade or store-bought (I like Portofino Sourdough)
  • Eggs
  • Sundried Tomatoes – Look for these at import stores or in the international aisle at the grocery store
  • Butter – for frying
  • Green Onions – optional garnish

How to Make It:

  1. Heat butter in a pan over medium heat.
  2. Cut a hole in the center of each bread slice (use a small glass or cookie cutter).
  3. Toast one side, flip, then crack an egg into the hole.
  4. Sprinkle with sundried tomatoes and green onions. Cover and cook until eggs are set to your liking.

Mediterranean-Inspired Breakfast: Eggs with Sundried Tomatoes

Ingredients

  • Slices of Bread

  • Eggs

  • Sundried Tomatoes

  • Butter

  • (Optional) Green Onions

Directions

  • Heat non-stick frying pan or cast iron skillet to a medium- low temperature. Add butter to pan when it reaches temperature.
  • Cut a hole in the center of each slice of bread (use a small class or a cookie/biscuit cutter).
  • Toast one side of the bread in the pre-heated pan. Flip, then crack an egg into the hole of the bread. Sprinkle with sundried tomatoes and green onions.
  • Cover and cook until eggs are set to your liking.
