Now that my son is going to kindergarten (how is that even possible, by the way?) it’s harder to find the time to make him – and myself – a filling breakfast in the morning. Combine that with also having a baby who only has four teeth and a husband who can’t find his keys and needs his cup of coffee… how are you supposed to find the time to make anything for yourself?
Your body needs fuel to get you through the day, and I’ve found that it’s especially important to get a few calories in before running out the door for school drop-off or heading to work. If your mornings feel rushed (or you’re just not much of a morning person like me), fitting in something healthy and nutritious can be a real challenge!
So, for those of us who aren’t exactly morning warriors, here are my top 3 fast, healthy and filling breakfast ideas to get your through the week:
1. Granola & Yogurt
Granola is my morning super-food. It has the fiber and calories I need to start my day without leaving tired and run down by 9:00am. Pair it with Greek yogurt and you’ve got a protein-packed breakfast fuels you straight through to lunch.

When I have my homemade granola on hand, it only takes a couple of minutes to layer some over a bowl of my favourite strawberry yogurt and add a few slices of a banana. The best part? My son and husband love it too. I can easily make everyone’s bows at the same so we all start the day with something in our stomachs.

2. Strawberry Banana Smoothie
Lately, I’ve been on a Smoothie kick. Ever since I was pregnant with my second son, I’ve loved a cool, refreshing glass of blended frozen fruit with Greek yogurt and milk. My oldest son is obsessed with Booster Juice (honestly, so am I), but it’s not always in the budget – so I’ve started making them at home. And you know what? He can’t even tell the difference!

Smoothies are an easy way to get in your daily fruit and protein, and they take less than five minutes to make. They also create almost no mess, which makes them perfect for those hectic mornings when you’ve hit snooze one too many times.

3. Scrambled Eggs on Whole Grain Toast
We all know that eggs are full protein and essential nutrients, but some people skip them in the morning thinking they take too long to make. Here’s my time-saving trick: whisk your eggs the night before!

Just mix your eggs and with a splash off milk, cream or water in a measuring cup, cover, and store in the fridge overnight. In the morning, heat your pan and pour them in and voila! Scrambled eggs in minutes. I love serving mine over a slice of buttered whole grain toast for a healthy breakfast that keeps me feeling full and energized well into the day
